Healthy 4 Ingredient Vegan Mac & Cheese

This recipe is oil free, grain free & vegan!

In the winter, I crave comfort foods but can’t make many recipes because they have too many ingredients. So I make my own!

You need:
1 cup cashews (cheapest place is Trader Joes)
1 onion, peeled
1 bulb garlic, peeled & separated
small amount plant milk (coconut/almond is best)

Mac & Cheese Sauce:

In a small saucepan –
1 cup unsalted cashews raw or roasted
1 whole onion
1 bulb garlic, peeled & divided

Cover ingredients with water & bring to a boil. Cook on high heat for 20 minutes.

Drain ingredients

Place in blender/food processor. If you don’t have a high powered blender, it may be helpful to cut the onion at this time. I used a Vitamix. Blend until smooth & creamy. Add just enough plant milk to get the mixture moving but no more, you want to keep it thick.

You can now use your sauce with pasta or vegetables. I love it with green beans. In the oven it will brown and in a pan it will thicken.

Optional additions: Salt to taste, nutritional yeast, pepper.
